3 Healthy Seasonal Fall Recipes

Below are some simple, healthy recipes made with seasonal ingredients that are rich in nutrients and essential to an overall well-balanced diet.

1. Pumpkin Oatmeal Muffins

Do you love the taste of pumpkin? We do, too! For this easy healthy fall recipe, you will need the following ingredients:

  • 2 ¼ cups of rolled oats
  • 1 teaspoon baking powder
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg and salt
  • 1 cup pumpkin puree
  • 1 egg
  • ¼ cup pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 1 cup unsweetened milk

Step One: Mix the dry ingredients together first and then add in wet ingredients.

Step Two: Allow the mixture to set and thicken for about 5 minutes before beginning to spoon into a muffin pan.

Step Three: Fill muffin cups almost completely full of batter. Bake for 30 minutes, then use a toothpick to check that the center of each muffin is set. The toothpick should come out clean. Allow muffins to cool for 10 minutes and enjoy!

2. Creamy Pumpkin Chicken Tortilla Soup

Nothing warms you up more than a hearty bowl of soup on chilly fall or winter nights. This delicious fall recipes requires the following ingredients:

  • 1 tablespoon olive oil or a good amount of cooking spray
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 (15 oz) can of pumpkin puree
  • 1 (15 oz) can of black beans
  • 1 (15 oz) can of corn kernels
  • 1 (15 oz) can of diced tomatoes
  • 1 (3 oz) jar of chicken broth
  • 3 cups cooked chicken breast
  • 1 teaspoon sea salt
  • ½ cup of nonfat Greek yogurt

Step One: Heat the olive oil add the onion, stirring and cooking these items together for about 3 minutes. Stir in garlic and cook for an additional 30 seconds.

Step Two: Add in black beans, corn, tomatoes, pumpkin and chicken broth. Stir this mixture generously and then add in the chicken breast. Continue to stir to combine all ingredients. Bring the soup to a boil and then lower the heat to let the soup simmer for about 10 minutes.

Step Three: Before serving, make sure to stir in the Greek yogurt and add any garnishes you see fit. Fresh cilantro, cheese, avocado and tortilla chips pair well with this dish.

3. Healthy Greek Yogurt Pumpkin Bread

If you loved baking bread with your parents when you were a child, this recipe is definitely for you. This simple, healthy fall recipe will require the following ingredients:

  • 1 cup pumpkin puree
  • ½ cup vanilla Greek yogurt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/3 cup coconut oil
  • ¾ cup brown sugar
  • 1 teaspoon baking soda
  • ¼ teaspoon sea salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 cup flour
  • ½ teaspoon nutmeg

Step One: Preheat oven to 350 degrees, grease the bread pan and set aside.

Step Two: Stir together the pumpkin, egg, vanilla, coconut oil, Greek yogurt and brown sugar until all ingredients are well combined. In a separate bowl, stir together the salt, cinnamon, pumpkin pie spice, nutmeg, flour and baking soda

Step Three: Mix the wet and dry ingredients together until combined. Pour batter into the bread pan and bake between 40 and 55 minutes. Insert a fork or toothpick into the center of the bread to ensure it comes out clean, indicating that the bread is done.
